Sure, barbecue is traditionally known to be more southerly, but that doesn’t mean you have to travel south of the Mason-Dixon Line to get a quality “Q”. In fact, the folks at lovefood.com say there’s a barbecue restaurant in Massachusetts that smokes the rest.
BT’s Smokehouse in Sturbridge, MA has been named one of the culinary blog’s list of the best barbecue restaurants in every state.
Here’s what lovefood.com had to say about BTs:
“From a trailer to a cabin, BT’s Smokehouse is a thriving southern-style barbecue restaurant in tiny, historic Sturbridge. It serves hickory cured and applewood smoked meats for 14 hours on plates or stuffed in burritos, rubens and sandwiches. The flagship products are pulled pork, ribs, brisket, cucumber salad, macaroni and cheese and collard greens.
The BT Smokehouse was founded in 2007. It is the official barbecue for the Red Sox AAA branch, Worcester Red Sox, with a concession stand inside Polar Park.
Here’s how BT himself, Brian Treitman, says he approaches barbecue, according to the restaurant’s website:
“I try to cook my barbecue the way you think barbecue should taste. When you think of a pork chop, in your mind it’s tender, succulent, ready to fall off the bone with a little smoke, and glazed with a savory, spicy and sweet sauce. You want to lick your fingers – no need for a towel. You want to soak the bone in the remaining drops and then vacuum it up to dry it. This is how I try to cook.
