New favorite spice for chicken!

Postby Big Anthony » Fri Jul 23, 2010 6:34 pm

I discovered earlier this year the ground anise goes great with grilled or roast chicken. It also turned out well used in a rub for ribeye, finished with some good balsamic. You have to use it judiciously, otherwise it is overpowering, but it is really awesome!

Never thought of licorice and chicken together. I'll have to give it a whirl sometime.

The great thing is that if you use it sparingly, you don't get the licorice taste, but it adds a little something that makes people go, "What is that? I like it!".

I did, however, develop a Spicy Black Licorice chicken recipe, which combines anise, molasses, and green Hatch chiles. It's awesome!
